H11 Voeding en vertering11.1 Gezond eten
Voedingsstoffen = de stoffen die je lichaam uit de voedingsmiddelen opneemt
- Koolhydraten: brandstof, reservestof, bouwstof
- Vetten: brandstof, bouwstof, warmte-isolatie (ook reservestof)
- Eiwitten: bouwstof (ook brandstof)
- Vitaminen: beschermende stof
- Mineralen: bouwstof, onderdeel van chemische processen
- Water: bouwstof, oplosmiddel, transportvloeistof, warmtebuffer
ADH = Algemene Dagelijkse Hoeveelheid
Additieven = stoffen die zijn toegevoegd om het voedingsmiddel aantrekkelijker of langer houdbaar
te maken (lichaam heeft de meeste niet nodig)
Voedingsvezels of ballaststoffen = bepaalde koolhydraten in het voedsel zijn niet of lastig verteer-
baar. Deze moleculen stimuleren de darmperistaltiek. Ook houden ze water vast, zodat de ontlast-
ing soepel blijft.
Hygiëne is belangrijk om bacteriën en schimmels af
te weren. Komen ze toch binnen? Speeksel opent als
eerst de aanval. Speeksel bevat lysozymen (= stoffen
die de celwand van de micro-organismen aantasten).
De aangetaste micro-organismen sterven in de maag
door maagsap.
Darmflora = nuttige bacteriën in de dikke en dunne
darm
dunne darm heeft plooien met daarop darmvlokken
(opgebouwd uit darmepitheel, haarvaten en een lym-
fevat)
Microvilli = uitstulpingen van de darmepitheelcellen
Resorptie gaat snel, want groot oppervlakte
- van hydrofiele stoffen bezitten de hydrofobe celmembranen transporteiwitten
- Vetachtige stoffen kunnen zonder transporteiwitten de membranen passeren
‘thight-junction' = ondoordringbare laag voor moleculen gemaakt van eiwitten
11.2 Vitaminen en mineralen
Vitamines zijn organische stoffen
Vitamine A: retinol en retinoïden
Retionol
- darmepitheelcellen stoppen het hydrofobe retinol in membraanblaasjes voor transport naar de
lever —> worden gekoppeld aan transporteiwitten —> gaan naar de cellen van het netvlies
Tekort: te merken aan staafjes van netvlies, kan uiteindelijk leiden tot blindheid
- lever kan retinol omzetten in retinoïden (= aanzetten stamcellen van het huid- en darmepitheel
tot deling nom slijtage te voorkomen)
Tekort: remt aanmaak nieuw darmpitheelcellen —> opname stoffen omlaag —> hogere osmotis-
che waarde —> water naar darminhoud, diaree
