Voedingsstoffen neemt je lichaam op uit je voedingsmiddelen. Uit voedingsmiddelen
piramiden: gezonder als je meer van onder dan van bovenste neemt.
Voedingsstoffen:
o Koolhydraten. Functies: brandstof, reservestof, bouwstof. Zit in
meelproducten en zoete voedingsmiddelen.
o Vetten. Functies: brandstof, bouwstof, warmte-isolatie, in tijden van
schaarste reservestof. In olie, boter, noten.
o Eiwitten. Functies: bouwstof, in tijden van schaarste. In vlees, vis, zuivel.
o Vitaminen. Functie: beschermend. In verschillende voedingsmiddelen, je
moet om het binnen te krijgen uit meerdere lagen van de piramide eten.
o Mineralen. Functies: bouwstof en onderdeel van chemische processen.
Anorganisch. Zit in elke groep voedingsmiddelen.
o Water. Functies: bouwstof, oplosmiddel, transport, warmte.
ADH: aanbevolen dagelijkse hoeveelheid.
Additieven: stoffen die zijn toegevoegd om het voedingsmiddel aantrekkelijker of
langer houdbaar te houden. ADI: aanvaardbare dagelijkse inname (van additieven).
Ook van contaminanten (zoals bestrijdingsmiddelen, per ongeluk in eten) ADI.
Kauwen: vergroting oppervlak speeksel als glijmiddel en verteringsenzymen
slikreflex spieren van slokdarm, maag, 12-vingerige darm, dunne en dikke arm en
endeldarm duwen voedselresten door darm heen met peristaltische bewegingen.
Peristaltische bewegingen: lengtespieren trekken ervoor samen (darm groter), kringspieren
erachter (duwen erdoorheen).
Bij vertering: onverteerbare resten via endeldarm naar anus.
Voedingsvezels/ ballaststoffen (koolhydraten): nauwelijks verteerbaar, stimuleren
peristaltiek, houden water vast dus ontlasting blijft soepel.
Micro-organismen (bacteriën) speeksel als eerste aanval. Speeksel bevat
lysozymen (tasten celwand aan). Bijna allen gaan vervolgens door HCl in maag.
Darmen: darmflora: nuttige bacteriën in dikke en blinde darm. Functie: afbreken
stoffen die niet door het eigen systeem kunnen worden afgebroken, verbetering
vitaliteit.
Wand dunne darm bestaat uit plooien, met daarop darmvlokken, met daarop
microvilli. Doel: vergroting oppervlak. Wand dunne darm bestaat uit
darmepitheelcellen, haarvaten en lymfevaten. Darmepitheelcellen scheiden
darminhoud (uitwendig) met rest van het lichaam.
Dunne darm neemt stoffen op dmv resorptie, naar inwendig milieu.
Voor hydrofiele stoffen: membraan heeft transporteiwitten.
Darmepitheelcellen door eiwitten strak aan elkaar: tight-junction. Eiwitten zijn voor
moleculen ondoordringbaar, alleen door darmepitheelcellen. Ziekteverwekkers
kunnen er niet doorheen.
