Voor u ligt mijn Food & Beverage Management verslag. In dit verslag heb ik een eigen restaurant
opgezet in de Pijp in Amsterdam. Hierdoor heb ik geleerd hoeveel erbij komt kijken bij de opzet van een
restaurant.
Door de interessante en leerzame lessen van meneer XXX heb ik dit verslag in elkaar gezet. In deze
lessen zijn we op alle belangrijke aspecten ingegaan die de opzet van een restaurant heeft. Zo zijn we
ingegaan op het concept, de kostprijsberekening en hebben we verschillende cases uit het boek
behandeld, die geholpen hebben bij de totstandkoming van deze opdracht.
