- This instability can cause water migration, diffusion of compounds,
phase separation
Physiological processes
- Refers to processes in living systems
o Respiration
o Transpiration
o Ripening due to ethylene production
- Climacteric (rapid ripening: apple, banana) and non-climacteric (continuous gradual process:
strawberry, orange)
