Tea is being used more and more within fine dining but we have been drinking
tea for centuries. Lately it has become more and more important. Now the
restaurant industry have really discovered tea as a beverage to be used during
the diner.
China:
- 2737 b.C: Emperor Shen Nung, the legend.
- 206 b.C – 8 a.C: First important document.
- 502 a.C: Emperor wanted to be burried with Tea and this stating it’s
spiritual value.
- 4th/5th Century: Tea is becoming very popular. Tea, due to its value, is
being used as a currency. Tea is being pressed in tiles.
- 618 – 906, Tangdynastie: Tea, for the first time, is being enjoyed as a
normal drink and not as a medicine.
- 960 – 1279, Sungdynastie: First real teaceramonies are being organised.
- 1644 – 1912, Qingdynastie: Tea is really popular and tea could be enjoyed
in teahouses, teashops and teacompanies.
- 1932 – today: Modern tea industrie after the collapse of the empire.
Japan and Europe:
- 729 a.C: First mentioning of tea by emperor Shomu
- 1738 a.C: Refinement by Sohen Nagatani
- 1906 a.C: The development of important Teaceremonies
- 13th century: Marco Polo
- 1602: VOC
- 1662: Tea was introduced to ladies in the UK.
- 1702: Twining was founded
- 1870: Twining introduced important melanges like Earl Grey, Lady Grey,
Prince of Wales.
- 1876: Lipton was found.
- 1914 – 1918: Tea becomes the preffered drink
The teaplant comes originally from China. Today in almost every region with a
sub-tropical and tropical climat. Between the 42 o and 29o latitude (breedtegraad).
 Plant is tree (can be as talll as 20 metres).
 Needs 200mm rainfall per month (Netherlands = 800mm per year).
 The best quality will grow above 1500 metres up to 3000 metres.
 After 5 years ready for harvest.
