- Darmflora = bacteriën in je darmen
- Deze heb je nodig voor vertering, het stimuleren van ontlasting en speelt een rol bij afweer
- Probiotica: gezonde bacteriën (die je via yoghurt/karnemelk binnenkrijgt) die je gezondheid
bevorderen
- Prebiotica: onverteerbare plantenresten (die je via ui, appel, prei etc. binnenkrijgt) waar
nuttige bacteriën in je darmen van leven
- Je kunt ook schadelijke bacteriën binnenkrijgen met voedsel, maar deze worden gedood
door het maagzuur
- Voedingsmiddelen zijn alle producten die je eet of drinkt
- Voedingsstoffen zijn de bruikbare bestandsdelen van voedingsmiddelen
- Voedingsvezels is een verzamelnaam voor alle onverteerbare stoffen in plantaardig voedsel
- Voedingsvezels prikkelen de wand van de darmen. Deze prikkelingen bevorderen
darmperistaltiek (samenknijpen en ontspannen van de darmspieren)
- Heb je te weinig voedingsvezels dan heb je als gevolg obstipatie (verstopping)
- Voedingsstoffen hebben 4 functies:
1. Bouwstoffen: voor de groei, herstel en ontwikkeling van cellen
2. Brandstoffen: energie leveren
3. Reservestoffen: opslag
4. Beschermende stoffen: tegen ziektes
- Eiwitten bouwstof + brandstof
- Koolhydraten bouwstof + brandstof + reservestof
- Vetten bouwstof + brandstof + reservestof
- Water bouwstof
- Mineralen bouwstof + beschermende stof
- Vitamines bouwstof + beschermende stof
- De ADH/aanbevolen dagelijkse hoeveelheid is een advies per voedingsstof per dag
- Deze verschilt per persoon, vandaar dat het in percentages staat en niet in getallen
- In veel westerse landen is obesitas een groot probleem omdat er hier veel voedsel te vinden
is
- Maar ook het allel speelt een grote rol bij obesitas, want er is een allel wat vetcellen aanzet
tot verdeling.
- Behalve voedingsstoffen en voedingsvezels bestaat je voedsel ook uit additieven: stoffen die
zijn toegevoegd om het voedingsmiddel aantrekkelijker of langer houdbaar te maken
- Je lichaam mag niet te veel van additieven binnenkrijgen, daarom bestaat er de ADI: de
Aanvaardbare Dagelijkse Inname, de maximale hoeveelheid per dag, per kg lichaamsgewicht.
