Voor u ligt de moduleopdracht voor het vak ‘Productkennis en Voedselveiligheid’. Dit
onderzoek naar een nieuw te ontwikkelen product is uitgevoerd in opdracht voor de opleiding
Voeding en Diëtetiek aan het NCOI. Het nieuwe product is een alcoholvrij bier verrijkt met
cafeïne en vitamine b3. Het onderzoek is uitgevoerd tussen januari en maart 2021.
In deze opdracht is het productieproces uitgewerkt voor het product Oppepper, een nieuw
product voor de verantwoorde dertiger. Dit is een doelgroep waar ikzelf snel toe zal behoren.
Ik heb het product ontwikkeld met mijn vrienden en mijzelf als doelgroep in het achterhoofd.
Ik heb geprobeerd een product te ontwikkelen waar mijn vrienden en ik behoefte aan hebben
en wat voor ons een verrijking zou kunnen zijn voor als wij weer mogen uitgaan.
