● Same fungus, but at a different time in growth
- Grey: in young grapes with still low sugar content: can lead to substantial loss of harvest
- Noble: when the grapes are ripe for harvest, the skin of the grape becomes porous. Moisture
evaporates, thus increasing the content of sugars, flavorings and aromas.
- Risk with noble: if not under control: harvest loss
- Must be picked by hand per grape (not per bunch)
- Not every year (depending on the weather).

• Vin de Goutte: De jonge wijn
wordt uit de gistvaten of tanks
afgetapt (scheiden van de vaste
stoffen). Vin de goutte is de
wijn die spontaan afloopt.
Het restant heet vin de presse. Dit wordt geperst en bevat meer tannine en plantaardige stoffen.
• Lagering: Vin de goutte en vin de presse worden apart opgevoed. De wijn wordt op RVS tanks
gelagerd van enkele maanden tot 2 jaar.
• Klaren: Helder maken van de wijn. Zwevende bestanddelen verwijderen dmv eiwit, gelatine en
bentoniet.
• Bottling: Event filtratie voor bottling.
•Afsluiten met kurk of schroefdop: smaak van kurk kan bij allebei voorkomen. Wordt veroorzaakt
door een schimmel die uit kurken kan komen , maar ook in rvs vaten en eiken vaten kan voorkomen.

Wood gives off aromas of vanilla, toasted bread, butter or cinnamon
