Fatty Acids
• Long chained carboxylic acids
• Unsaturated fatty acids → double bond between C’s, less H-atoms in the
molecule
• Fats → Mixtures of glycerine (propantriol) and three fatty acids
o Have no specific melting point (mixture is always different) → melting
range
o High saturated fatty acids → often liquids
▪ Double bond in Z-position molecule has a “kink”
▪ Molecules cannot get as close → v.d.W. forces are weaker
