Tema 10: Lípids:Funcions:
- Magatzem d’energia i aïllament tèrmic: triacilglicerols
- Lípids de membrana amb funció estructural: glicerolípids, esfingolípids i esterols
- Lípids altres funcions, com la senyalització, cofactors i pigments: hormones esteroides,
prostaglandines, vitamines
Estructura dels àcids grassos:
Àcids carboxílics amb cadenes hidrocarbonades de 4-36C. Amb cadenes saturades o
insaturades (amb un o més dobles enllaços).
Menys interació hidrofòbica en grases insaturades. Habitualment no tenen ramificacions.
Normalment nombre de carbonis parell.
Són insolubles en aigua, però solubles en dissolvents orgànics.
Saturades, sense doble enllaç o insaturades amb un o més dobles enllaços.
Els àcids saturats fan interaccions de van der Waals, però si tenim alguns amb insaturació, hi
ha un contacte molt menor, menys interaccions, no poden empaquetar de la mateixa manera i
no es formen estructures tan denses i estables, segons la composició dels àcids grassos que el
formen tenim un lípid més o menys dens.
Nomenclatura:
Àcid n-dodecanoic (12 C)
Tenen nom comú
Nomenclatura reduïda: nº carbonis:nºsaturacions(Δnº de carboni on es troben començant a contar des del COOH)
, Triacilglicerols: (molècula hidrofòbica, emmagatzematge)
- Compostos de 3 àcids grassos units mitjançant un enllaç tipus ester a una molècula de
glicerol.
- Són grasses sense càrrega
- Són la manera d’emmagatzematge dels àcids grassos en els adipòcits
- Són hidrofòbics i no necessiten aigua pel seu emmagatzematge i rendeixen el doble
d’energia per gram que el glucògen
Lípids estructurals de membrana: (saber les parts de cada un)
Han de ser lípids amfipàtics. Sempre tenen un cap polar. Classificació:
- Fosfolípids:
a) Glicerofosfolípids: base de glicerol, part apolar fosfat i un alcohol
b) Esfingolípids: base d’esfingosina, amb fosfat i clorina
- Esterols
- Glucolípids: esfingolpid sense fosfat i té una part ensucrada
. Fosfolípids tipus glicerofosfolipid:
- Tenen 2 àcids grassos units a glicerol
- El més comú és que una cadena sigui saturada i l’altra insaturada
- Té un grup variable que pot ser colina (fosfatidilcolina), serina (fosfatidilserina),
etanolamina (fosfatidiletanolamina) o inositol (fosfatidilinositol).
- La cadiolipina és un lípid que es troba de forma exclusiva a la membrana bacteriana o a
la membrana mitocondrial interna (MMI)
