Eten van vlees heeft betere ontwikkeling van brein mogelijk gemaakt: veel energie voor nodig. Ook:
kortere darm, want minder zwaar plantaardig voedsel.
Agricultuur (granen, rijst, …)  enorme populatiegroei, veel meer kinderen per tijdseenheid. Maar:
voedsel eenzijdiger, dus andere problemen: infectieziekten, ijzertekort, ontwikkelingsachterstand,
gebitsproblemen…
We evolueren nog steeds sinds de agricultuur-periode: smallere kaak, lactose-tolerantie, genen die
helpen zetmeel om te zetten in glucose… Dit is te zien in verschillen tussen culturen die resp. veel
vlees/zuivel/zetmeel aten ten opzichte van culturen die weinig hiervan aten.
“Je bent wat je voorouders aten.”
Wat ons menselijk maakt: altijd iets te eten vinden, en hiervan een gezond dieet maken. Er is niet 1
ideaal dieet, maar wel meerdere goede. Niet het Westerse helaas.
Afwijken van je originele dieet (bij uitgesproken culturen)  overgewicht, diabetes, hypertension…
Hoewel rood vlees al 2 miljoen jaar gegeten wordt, leidt het wel tot kanker en atheriosclerosis.
Het menselijk dieet is slecht, niet door vlees, maar omdat we het zijn gaan koken. Dit maakt het
makkelijker verteerbaar: minder energie voor nodig, meer voedingsstoffen eruit. Ook maakt het
opname van calorieën makkelijker: we worden dus sneller dik.
Als we minder verwerkte voedingsmiddelen eten en meer bewegen (Mediterraans dieet) zou dit de
volksgezondheid goed doen.
