PINEAPPLE UP-SIDE DOWN


Ingredients:
½ cup brown sugar
4 pineapple, drained
1 ¼ cup cake flour
2 tbps. Baking powder
1/3 cup butter
½ cup white sugar
1 egg, beaten
½ cup evaporated milk
½ tbsp. vanilla


Procedure:


1. Grease the 9x ½ round pan heavily with the butter, sprinkle with brown sugar.
2. Arrange pineapple sliced, decorate with cherry. Set aside.
3. Sift dry ingredients together, set aside.
4. Cream the butter with the sugar gradually;
5. Add egg one at a time, beating well after each addition.
6. Add milk with vanilla alternately with the dry ingredients to the creamed mixture.
7. Pour over the pineapple. Bake on moderate heat, 350˚F for 30-35 minutes
8. When baked, let stand for 5 minutes then turn upside down.
