Une souche locale d'Archaea hyperthermophile, isolée au niveau d'une
thermale de l'Est d'Algérie, exploitée dans le but d'extraire une amylase
thermostable a montré sont aptitude àproduire des amylases exocellulaires
(NABTIet al., 2005).
Différentes techniques de séparation ont permis la purification de cette
enzyme, l'effet de l'EDTA (Éthylène-DiamineTétra-Acétique) sur l'extrait
enzymatique est déterminé en ajoutant, au mélange réactionnel, contenant
lextrait enzymatique et la solution d'amidon, 0.1ml de la solution de l'EDTA
ayant une concentration allant de 1à5mM, l'incubation se fait à 70°Cpendant
30min (tableau 1).
