OL Lab 2: Protein Denaturation
Purpose: Describe in your own words and in complete sentences, the purpose of this
experiment.
Learning about protein denature and how it works, as well as why it’s important.
Learning about how and what are chemical and physical causes that creates protein
denature.


Observations: List 3 observations you have made in this simulation.
 The milk added to the beef stew changed the stew texture. Due to it probably
being spoiled and the high acidic levels is why it changed, causing protein to
denature.
 Proteins: building blocks of life and are present in every single living organism.
 Ovalbumin: main protein in egg whites. 60-65% of total protein. Most chefs will
use a cooper bowl to mix egg whites due to the metal in the cooper because
copper ions stabilize the denatured egg whites.

Answer all the questions below:


1. List out four abundant elements found in the body and state their contribution to
body functions. (2 points)
 Hydrogen if combined with oxygen they make water which makes up most of the
human body.
 Calcium used as a structural material in bones and necessary for protein
regulation as well as muscle contraction.
 Carbon forms chains that are used to build carbohydrates, fats, nucleic acid and
proteins.
 Nitrogen is in proteins as well in nucleic acids which make up the genetic code.

2. How does the protein shape determine its function? (1 point)
By the amino acid sequence
3. What are enzymes and how does pH and temperature affect enzymatic activity?

Enzymes are produced in living cells; they are the catalysts in biochemical reactions
which are usually complex or conjugated proteins. Temperature like heat effects the
