4.1 Voedsel
In de voedingsmiddelen die we eten zitten voedingsstoffen dit zijn de bruikbare bestandsdelen.
Bacteriën en schimmels kunnen voedsel laten bederven. Bacteriën en Schimmels kunnen
koolhydraten omzetten in nuttige dingen bijvoorbeeld de zure smaak van yoghurt wordt gemaakt
door melkzuurbacteriën. Gisten zetten energierijke stoffen om in alcohol. Je kan je voedsel
conserveren waardoor je eten niet beschimmelt. Dit kan op verschillende manieren:
- Invriezen
- Pasteuriseren ( verhitten tot 72 graden )
- Steriliseren ( verhitten tot 130-140 graden )
- Drogen
- Toevoegen van conserveermiddelen
- Inblikken
- Vacuüm verpakken
Enzymen zijn hulpstofjes die het proces in je lichaam versnellen. Een enzym is een soort hulpstofje
(speciale eiwitten) die help andere stofjes bij elkaar duwen over en over. Een enzym kan ook een
stofje juist uit elkaar trekken. Enzymen kunnen maar bij een proces tegelijk helpen. Omdat het een
eiwit is werk hij het beste bij ongeveer 27 graden. Er is een optimumtemperatuur waar de enzym het
best werkt. In een optimumkromme kan je een diagram met de minimum en maximale temperatuur
zien.

4.2 Voedingsmiddelen en voedingsstoffen
Voedingsmiddelen zijn alle producten die we eten en drinken. In die voedingsmiddel zitten
voedingsstoffen die de bruikbare bestandsdelen. Dit zijn de functies van voedingsstoffen:
- Bouwstof, voor groei en ontwikkeling
- Brandstof, het leveren van energie
- Reservestof, om op te slaan
- Beschermstof, zonder deze stoffen kun je snel ziek worden
Er zijn in totaal 6 voedingsstoffen:
- Eiwitten, als brandstof en bouwstof
- Koolhydraten, brandstof, bouwstof en reservestof
- Vetten, brandstof, bouwstof en reservestof
- Water, bouwstof
- Vitaminen, bouwstof en beschermende stof
- Mineralen, bouwstof en beschermende stof
Met een indicator kan je een bepaalde stof aangeven. De indicator van koolstofdioxide is helder
kalkwater. De indicator van zetmeel is joodoplossing (geel). Als dat in aanraking komt met zetmeel
wordt het paars

4.3 Voeding en leefstijl
Hoe meer calorieën er in voedsel zit hoe meer energie er in zit. Je moet zorgen dat alles een beetje in
balans is dus dat je evenveel eet als dat je verbrand. De schrijf van vijf zitten alle dingen die je per dag
moet eten. Dit zijn de 5 vakken van schrijf van 5
- genoeg vocht binnen krijgen
- genoeg groente en fruit
- vetten, niet teveel
- zuivel zoals yoghurt en melk
- brood, pasta dat soort dingen met veel koolhydraten
