E-PORTFOLIO MIDCOURSE ENTRY Nutritional Principles in Nursing: Nurse E-Portfolio Mid-Course Entry In the initial course entry, I rated myself at about a three on a scale of one to five, in regards to my nutritional health. Unfortunately, I have not improved in on the scale, but honestly have probably gone down a bit. I wouldn’t say that I would go down to a two, but probably to a 2.5 or 2.7. I have recently started a full-time job; I work 40hrs Monday through Thursday. Though I absolutely love this new job, it has been difficult to establish a set routine for working out. Furthermore, the long hours at the office inevitably lead to snacking, which disturbs the set meal plan I had in place prior to starting. I usually eat a quick breakfast at home (like cereal or oatmeal), and usually bring lunch (rice, beans, chicken left over from dinner) or purchase a sandwich from the deli if I didn’t have time to pack my lunch. Then, for 7hrs after my lunch I snack on crackers or something much less healthy
