Ruimtelijk:
Aminozuren zijn chiraal.
Aminozuren hebben altijd L-aminozuren.
20 aminozuren:
De R-groepen zijn hier apolair en
hydrofoob ( geen N,O, (S). Deze
aminozuren klusteren samen in een
eiwit d.m.v. hydrofobe interacties.
Glycine is de enige aminozuur dat niet
chiraal is. De kleine H-zijgroep maakt
ook niet echt hydrofobe interacties.
Methionine heeft wel een S, maar
die zit tussen 2 C’s → apolair
Proline heet een cyclic zijgroep,
wat de polypeptide dat proline bevat,
minder flexibel maakt
Deze aminozuren zijn hydrofiel (de zij-groepen
(bevatten N,O of S) kunnen H-bruggen vormen)
Cysteine kan maar zwakke H-bruggen maken,
doordat het maar 1 S bevat → polariteit is zwak
