Prerequisites for taking this course: Sophomore standing or instructor consent.

Course Description: To provide an understanding of basic nutrition science to non-
science majors and students with a limited scientific background. Students will become
familiar with: the principles of diet planning, government standards, and food labeling;
the biological functions and food sources of each nutrient; energy balance, weight
management, and physical activity; the role of nutrition in chronic disease development;
nutrition throughout the life cycle; and current nutrition-related controversies. This
course meets the science requirement for undergraduate non-science majors. It is not
acceptable for biology credit for biology majors.



Course Objectives:
By the end of the course, students will be able to:
• Describe the components of a healthy diet, and critically evaluate the quality of
their own diet.
• Identify the major functions and food sources of each macronutrient
(carbohydrate, protein, lipids) and micronutrient (vitamins and minerals).
• Explain the role of diet in maintaining health and preventing chronic disease.
• Summarize the nutrients of concern during human growth and development, and
throughout the aging process.
• Assess the quality of nutrition information presented in the media




Description of assignments, tests, and other required activities:

Assignments for this course include required readings, in person and online lectures, 4

exams (including the final exam), and a Diet Analysis Project.

Students are required to complete all required readings and attend each lecture.
Supplemental readings, although not required, are highly recommended.

Weekly Online Quizzes are also provided to enhance your learning experience. The
quiz questions will come from that week’s lecture and assigned readings. You will take
the quiz on the Trunk website. The quizzes will be available only until 8:00 am of the
next class meeting time. There will be absolutely no make-up quizzes. Quizzes will
be timed with a time limit of 45 minutes per quiz. Quizzes can be taken a maximum of
two times and the highest of the two scores will be recorded. The questions provided in
these quizzes are similar to those you will find on the exams.

There will be 4 exams. Each exam will be multiple choice and will be based on the
materials presented in the required readings and lectures. The final exam is not
comprehensive.

For the Diet Analysis Project, students will be asked to record their intake of all foods
and beverages consumed over a 3-day period and all activities engaged in over one 24
hour period. They will then analyze this data using the required software package, Diet
Analysis Plus (version 10.0 or higher), and generate a 3-day average intake report
along with a 24 hour activity report. Students will then be asked to evaluate specific
components of their diet and physical activity based on these reports. Specific
instructions are provided under the Assignment tab on the course website. All
assignments are due on the date/time specified. There will be no exceptions unless
permission has been granted by the Dean or the University.

There will be 3 optional online discussions offered for extra credit. For online
discussions, students will be expected to read the assigned background materials prior
to their participation. Each student will be encouraged to post thoughtful comments
relevant to the assigned topic and the specific questions posed by the instructor.
Students will be graded on the quality of their postings, as well as their understanding
of the assigned material. Students may submit their postings only during the week in
which a discussion forum is active. Each online discussion can provide a maximum of
2 points each that will be added on to your final grade. The total possible number of
optional points is 6 points. No other extra credit opportunities will be offered.

Exams:
You must take the exams on the specified dates or face significant penalty unless:
a. You have a note from Health Services or the dean’s office regarding an illness
or other major personal issue.
b. The exam falls on a religious holiday or at a time when you are competing in a
major athletic event and you have arranged in advance to take it at another
time.
c. You have a learning disability and have authorization to take the exam in a
distraction-free environment or you are authorized for extended time. If this is the case
you need to obtain prior approval from the Program Director of Disability Services.

Online Discussions:
Students must submit their postings only during the week in which a discussion forum is
active or will not receive credit for this optional assignment.


Course texts and Materials:
Required text - Understanding Nutrition (Wadsworth Cengage, 13th edition, 2013), by
Eleanor Noss Whitney and Sharon Rady Rolfes, ISBN 9781133587521. This text is
available in print at the bookstore. Online, downloadable, and rental versions are also
available for purchase/rental.

Required software - Diet Analysis Plus (Wadsworth Cengage, version 10.0 or higher)
will be used for analyzing your 3-day diet record. Available at bookstore (bundled with
text). The program is only available in an online version, and requires an access code
number. You can purchase either the 2-semester instant access code (ISBN
9780538495097) or printed access card (ISBN 9780538495080). Earlier versions of
this software are unacceptable for this course.

IMPORTANT NOTE: Although version 9 of Diet Analysis Plus is installed on the
computers in Eaton Hall on the Medford campus, this version is not acceptable. Please
consider cost-sharing the access code for version 10.0 of this software with your fellow
students. Each access code allows up to 5 student profiles
