It is crucial that care workers have a good understanding of nutrition, as
well as of the reasons why individuals may not be eating an adequate
diet, and how this can be rectified.
How you will be assessed
This unit will be assessed by your tutor, by a series of internally assessed tasks set
by them. There are a variety of activities within this unit that will consolidate your
knowledge and stimulate your ideas. There are two assessment practices that will
enable you to check you have all the knowledge needed to complete the assignment.
These give you the opportunity to develop your technique and support you to achieve
the higher grades.
When producing work for the final assessment, it is crucial that you check your work
thoroughly against the unit specification, to ensure you have not missed anything out.
This is important, as the Pass criteria cannot be awarded if the work is incomplete.
It also gives you an opportunity to check your work for spelling, punctuation and
grammar errors.
If you are hoping to achieve the Merit and Distinction grades, it is important that
you pay attention to the descriptor verbs in the task. These are words like ‘explain’,
‘describe’, analyse’ and ‘evaluate’.
The assignment set by your tutor will be made up of a number of tasks, which will give
you the opportunity to present all the information needed to achieve the Distinction
criteria. It will involve a mixture of written answers and activities, including:
▸▸ a resource for volunteers
▸▸ an examination of factors affecting two individuals with specific dietary needs

, Getting started
Good nutrition is crucial to support good health. For some people, it can be very
difficult to access a healthy diet. Write down a list of reasons why some people
do not have control over what they eat. When you have completed the unit, see
if you can add to this list.

Concepts of nutritional health
To provide nutritious, healthy food and advice on healthy eating, it is important to
understand the theory behind the wealth of dietary information that is published. You
also need to understand the way that processing can affect the nutritional value of
foods, so you can avoid destroying nutrients.
This section looks at the current advice and issues affecting the diet of people who live
in the UK.
Healthy eating and a balanced diet
The National Diet and Nutrition Survey, published in May 2014, showed that, on
average, the population of the UK is still consuming too much saturated fat, added
sugars, salt, and not enough fruit, vegetables, oily fish and fibre. Dietary advice has
been available to people in the UK for many decades. During the Second World
War the government issued leaflets with recipes for nourishing meals, alongside
healthier lifestyles and dietary advice. Current advice has been designed to be easy to
understand and hopefully, more likely to be followed.
eatwell plate and main food groups
The eatwell plate is a visual representation of the proportions of each different type of
food you should consume.
The eatwell plate illustrates food in groups as this is a simple way of categorising foods.
The five main food groups are:
▸▸ fruit and vegetables (33 per cent)
▸▸ bread, other cereals and potatoes (33 per cent)

▸▸ milk and dairy products (15 per cent)
▸▸ foods containing fat and foods containing sugar (7 per cent)
▸▸ meat, fish and alternatives (12 per cent).
It is easier for people to plan a healthy diet if advice is not too complicated. Even
children can usually understand these food groups. Anyone on a special diet may need

help from a dietician to adapt this to their dietary restrictions.
Over-nutrition – a condition
that results either from eating Malnutrition, including under-nutrition and obesity
too much, or eating too many You might think of malnutrition as a condition in which people are not getting enough
of the wrong types of food, or to eat, however, malnutrition is any condition in which the body does not receive
taking too many vitamins or sufficient nutrients to function properly. Malnutrition can include both under-nutrition
other dietary supplements. and over-nutrition.
